Welcome Readers,
Well, here we are, December already. The Christmas season is upon us once again. This is my favorite time of the year. I go all out in decorating the house, inside and out. I have 3 trees all done differently. My kitchen and dining room looks like the snowmen have taken over. I collect snowmen and show them all off each year. I love to bake and give cookies and candies to my neighbors, friends and family. I try to help those that I know of who need food and clothing this time of year. I'm part of the Christmas program at 2 different church's this year. Alot of lines to remember, so keep me in your prayers. I had my sister and her family from Michigan down for 2 weeks during Thanksgiving and we had a wonderful visit. So my platter is full this time of year. I would like to share a favorite recipe with you for your Christmas dinner. Hope you like it as much as my family and friends do.
Christmas Coconut Cake
1 white cake mix
1 8oz pkg. cream cheese (room temp)
1/2 cup sugar
1 cup powdered sugar
1 16oz container cool whip
1 small can or 1/2 bag coconut
Red and green food coloring
Bake cake as directed in 3 8 or 9in cake pans. Cool
Mix cream cheese with sugar till creamy. Add powdered sugar. Fold in Cool Whip,(do not use mixer with cool whip). Mix 1/2 of coconut with red food coloring till desired color. Mix the second half of coconut with green food coloring. Ice cake between layers and on top and sides. Sprinkle with coconut on top and sides. Makes a beautiful cake for the Holiday table.
